For example, many people feel their vegetables need butter or salt added to them to taste better However, this can be due to overcooking Many people boil their vegetables into blandness

Try cooking your vegetable differently or for a shorter time Grilled vegetables have a very different flavor from boiled ones, but even lightly steamed ones will taste much better than overcooked ones Leave a little crunch to your cooked vegetables and you will find the flavor much improved

If you want to add something, keep it simple Chicken broth can provide a great flavor as you cook Low sodium soy sauce, fresh or dried herbs and so forth can bring out delightful flavors

Many people even spoil their uncooked vegetables Just think about some of those classic salad toppings, such as bacon bits and many salad dressings

Some salads can have as many calories and fat as a fast food hamburger and fries, just due to what’s added to them You can avoid this by thinking about what you put into your salads Fruits, nuts, cheese, egg and so forth are quite healthy Use a vinaigrette or have your salad dressing on the side to control the quantity

Obviously, avoid frying your foods Frying adds a lot of calories Stir frying isn’t nearly as bad, with its limited use of oil But immersing your food in oil to fry it is a great way to ruin the healthfulness of food

Sandwiches can be very good for you too, but you need to think about the bread you’re using Plain white bread isn’t especially good for you Try whole grain breads instead You may find a new favorite

Healthy eating is a major lifestyle decision It takes time to build better habits Most people cannot make the leap in a single bout of healthy shopping It takes time to rebuild habits and to change your taste buds so that you begin to prefer foods prepared in a more healthy manner But you can do it if you are determined

Another great idea is to shape chicks with scissors from cooled marshmallow, and then dip them in yellow colored sugar Use pieces of nut for the eye and the bill Penuche is another all-time favourite Enjoy the fun of making these chocolate dipped candies and penuche, closely related to fudge

CHOCOLATE DIPPING

The best compliment that can be paid store-bought candy is to say it tastes homemade This is as true of chocolates as it is of any other candy, but the proudest compliment a home chocolate dipper can receive is to have someone say her chocolates look professional – though they must still taste homemade

Chocolate dipping is a profession and dippers spend much time becoming adept at it, but once you have learned about the temperature requirements, the actual dipping is not difficult

Use at least a pound of chocolate for one session of dipping, shave it finely and put it in the top of a double boiler over water no higher than 120 degrees measured on your candy thermometer Cover the chocolate and begin to get your centers ready for dipping Stir occasionally so that the heat is distributed evenly When most of the chocolate is melted beat it thoroughly with a spoon or rubber paddle, smoothing out all the lumps

In the meantime have the candies you are going to dip lined up on a board or tin in the room where you are to dip them Spread waxed paper or oilcloth over your work surface or use a marble slab

Dipping forks may be used instead of the fingers but while it may sound easier and certainly is less messy, there are many objections to it Finger dipping is the best and quickest way for the amateur to become a professional

SUGGESTED CENTERS FOR CHOCOLATES

Butter crunch Marzipan

PENUCHE

1 pound brown sugar, 2 tablespoons butter, (2 1/3 cups) 1 teaspoon vanilla, 3/4 cup milk or equal parts milk and cream

Measure 1 pound brown sugar and 3/4 cup milk or milk and cream into a 3-quart saucepan and stir over low heat until the sugar dissolves Continue stirring until it boils, then put in your candy thermometer and boil over medium heat until it reaches a temperature of 237 degrees Remove from heat and add 2 tablespoons butter but do not stir

For a creamy penuche, cool to 110 degrees, add 1 teaspoon vanilla and beat until thick and creamy Turn into a buttered pan, 8 by 8 inches For a harder, more sugary candy, let cool to 150 degrees and beat until the candy begins to lose its gloss and begins to feel a little grainy under the spoon Penuche is easier to doctor than chocolate fudge, if you miss the perfect moment for turning it out If it becomes too hard, you can thin it with a small amount of cream, which will lessen the grainy texture, too

Another benefit of green tea has been found to lower blood sugar in animals and that green tea contains theanine, which increases the release of the neurotransmitter GABA, which exerts a calming effect on the brain In addition green tea increases dopamine that increase the brains sense of pleasure The Journal of Nutritional Biochemistry found that green tea has protective mechanisms for the brain when dealing with Alzheimer’s and Parkinson’s diseases

The winning cheese was Queso Arico curado pimento, a cured goat cheese with paprika, roasted maize meal and sugar This particular cheese has been made for years in Tenerife, passing from generation to generation It was produced by the Sociedad Canaria de Formento (a co-operative of 50 cheese makers based in the Canary Islands) The winning cheese was one of 12 from the Canary Islands to garner an award at the show

The festival, which began 20 years ago, was held in Dublin, Ireland This marked the first time it was held somewhere other than the U K More than 2,000 cheeses were on display and competing for the title of “Best Cheese in the World ”

Thousands of entrants from across the globe participated in the event Reports indicate that the competition was really fierce Four cheeses were neck and neck in the final judging However, Tenerife’s Queso Arico curado pimento came through by a whisker

How To Make Proper BBQ

While I write this it’s a couple of days away from Valentine’s and while most of us are trying to figure out how we are going do something nice for our better half I am thinking about the summer For most of us except the odd few of you that are vegetarians the summer means BBQ season and for me even though I am a Canadian I think of proper low and slow southern BBQ cooking

So what is southern BBQ? Well like most of the great foods found around the world it was created by the poor and in this case southern African American slaves BBQ originally was only made using beef brisket and pork butt as these were the only cuts of meat the poor could afford The interesting part is that while these are the toughest cuts of meat on both animals they are also the most flavorful The big problem with these cuts is that cooking them like a steak will only make them taste and feel like leather The only way to cook these cuts is low and slow and the best way to do so is with smoke! Like all good things they happen for a reason and the southern states is loaded with amazing wood for smoking

Over the years BBQ has become more than just brisket and pork butt (pulled pork) and has also included chicken and ribs For many ribs are the ultimate BBQ and sadly very few of you have had good BBQ’d ribs because of a few reasons Unless you live in a town with an authentic rib joint that understands the low and slow cooking process you probably haven’t had good ribs Secondly the most common mistake when making ribs at home is boiling them first

Let me explain something about boiling any meat, all it is ever good for is making stock and if you are boiling baby back ribs you are making one expensive pork stock! Whether you have access to a smoker or not cooking low and slow with smoke is always going to produce the best ribs If using a grill you can cook them with indirect heat, leave one side of the BBQ on and rest a smoke pouch on top on the heat side, place your ribs on the other side and keep the temperature around 250 F and cook them for about 3 hours

Another misconception about cooking ribs is that they are supposed to fall off of the bone, this isn’t true When eating you want them to break cleanly away from the bone, falling off the bone happens when they are over cooked or boiled and isn’t what you are looking for

Using a rub which consists of a mixture of dry spices is all you need to marinade and cook your ribs with You never want to add BBQ sauce at the beginning of the cooking process BBQ sauce has lots of sugar and will burn even at a low heat My best suggestion is use rub only and add the sauce near the last 10 minutes of cooking or add the sauce just before you serve it

To make a great rub you need to do one of two things, find a recipe or premade rub online or create your own The later will take a lot of time but can be very rewarding I can’t draw nor can I paint a picture, for me making a rub or any recipe from scratch is my creative outlet and quite therapeutic

Next time you’re making BBQ take your time and do some research before you start, trust me when you do finally have a proper BBQ experience it will change your view on what real BBQ is supposed to be!
