Although many of us want to believe that our favorite actors, athletes, and musicians would never attach their names to diets or products that are unhealthy or that just don’t work. However the reality is that celebrities often endorse unhealthy products in order to make a buck, and this happens more often than you might suspect.

Celebrities are under an extraordinary amount of pressure to keep themselves in the limelight or risk being forgotten, with work and the money to fund their lifestyles no longer at their disposal. This does not mean that everyone who endorses a diet is only doing it for the sake of publicity and the opportunity to keep themselves in the spotlight. But some do find that attaching themselves to diets is lucrative for publicity and added income. Not to mention the extravagant gift incentives that diet and weight-loss companies thrust in front of celebrities to entice endorsements out of them. If we were in their shoes, we might find it hard to pass up some of these incentives, as well.

The real problem occurs when, just like the rest of us, the endorser does not understand the differences between a healthy diet is and an unhealthy diet. It is a fact that most Americans do not truly understand how to make healthy food choices and how to eat healthy on a regular basis. If we did, obesity might not be as rampant as it is in this country.

The diet and weight-loss industry relies on our ignorance to continue fueling the market for even more questionable diet plans to be made available to the unwary consumer. They also recognize the marketing potential and influence celebrities carry because of our fascination with them. Using paid actors/models/athletes/musicinas to make scripted testimonials about diets and weight-loss products has netted record-breaking sales and profits for the companies behind them.

Despite the long list of diet plans and weight-loss products sold every year, we keep getting fatter as a society, and our health continues to get worse. And unfortunately this keeps happening because we continute to listen to the hype and endorsements made by our favorite stars.

As a nation we still fail miserably when it come to nurishing our bodies with healthy foods. We cannot, however, lay all of the blame at the feet of the celebrity who endorses a certain diet or weight-loss product. Nor can we look to the diet and weight-loss industry to provide us with useful information about what a healthy diet consists of. They don’t want us to eat healthy because that would destroy their very lucrative sales.

The fact is, we have to take responsibility for our own health and the choices we make that can seriously affect it. We need to stop being blind followers and instead become informed decision-makers.

There are reputable resources where you can find information about healthy eating and ways to lose weight safely without putting your health at risk. Armed with this information, you will be able to spot and avoid diets that offer questionable advice and suggest using questionable products. You will find that the real science behind losing weight and keeping it off is more about eating foods that have a high density of nutrients and exercising, rather than controlling food portions, counting calories and fat, or even eliminating certain foods from your diet.

Article: Healthy cooking for special diets do not need to be a chore. The key is to remember important issues for each diet, and to creatively change your recipes to meet those needs.

Vegetarian cooking is not difficult. The goal here is to remember that varying degrees of exclusion of animal products from your preferred diet sometimes makes it difficult to lay hands on certain proteins. Most plants, legumes, and grains contain at least some amino acids that make the complete proteins found in animal products. Mixing and matching foods is a great way to be sure that vegetarians get all amino acids. Your job is made easier by the fact that most vegetarians are not vegans, which means that many include some variant of animal products into their diets.

These proteins are excellent supplements to a vegetarian dish of their favor. Textured vegetable protein (TVP), and soy proteins such as those found in tofu and Boca also make vegetarian cooking much easier. Most of these proteins do not have much flavor of their own, so they will blend in nicely with whatever dish you are cooking. When it comes to vegetables and grains, just remember the basics: the more colorful the vegetable, the more nutrients it has, and whole grains make better nutrition than their bleached counterparts. Legumes are excellent resources, but be sure to cook them well as legumes are often difficult to digest for most people.

Many of the same rules for vegetarian cooking also apply for diabetic cooking. Instead of animal products and protein, the issue here is sugar. When most people think of sugar, they think of candy and other sweets. However, there are other foods that contain those simple sugars that often overload the system of diabetics. So, the goal for preparing diabetic dishes is to avoid the temptation to use these sugars in excess. Try using whole grains instead of bleached ones such as white bread and pastas.

Feel free to serve dessert, but try using a sugar substitute and stick to whole grain flour. Sugar substitutes are a must for consideration when serving drinks such as sweet tea and soda. Fruit is a possibility, but do not expect your diabetic guest to eat a whole bowl full. Even so, keep some sugary snacks and juices on hand for blood sugar emergencies when blood sugar has dipped well below healthy levels.

Light cooking recipes presents the least hassle because most westerners are beginning to appreciate its benefits as a means of disease prevention. The trick to light cooking is simple. Stay away from heavy meats such as meat with a lot of fat on it or red meat. Try substituting meat with TVP or tofu when you can get away with it. Lightly fry foods in cooking spray rather than butter or oil, and use foods that will offer the best nutrition possible.

Article: ‘Everyone is selling Italian food, even in food courts, and everyone is confused as to what a good one really is these days. Every chef we hire, I tell them to do pasta our way or it’s no way.’

WHEN my younger colleague Thomas dug into the $30 lobster tagliolini here, ‘wah, worth it lah!’ was his immediate response.

This, from a Gen-X man who grew up on a diet of $9.90 fast food pastas made with freeze-packed sauces.

Then he wolfed down the Ossobuco in Cremolata (mee pok with veal shank in white wine and herbed tomato sauce) in blissful silence.

He also had a distinct smile when he bit into the fresh bread smeared with the dangerously smooth sliver of marrow, carefully dug out of the shank, softly trampled with droplets of the wine and tomato sauce.

All in an old Italian restaurant, in the very volatile pasta business, which nearly closed twice in its 15-year history since the early ’90s.

‘It is very hard to run a successful restaurant business here if you don’t put your knee and elbow grease into the operations,’ said owner Rolando Luceri.

He wound down from the glamorous world of hotel management and operations and took over from the previous owner of Pasta Brava, who had contemplated winding up because he was ‘just not into the business as it was a venture his father paid to get him into’.

So Mr Luceri revamped the operations at the age of 52.

Fifteen years on, this is still one of the better dedicated pasta joints around.

The secret to their staying power – a stubborn determination to maintain consistency despite changing demographics with fickle expectations.

Mr Luceri said: ‘We still hand-make our own pastas and have the dried and fresh range. It is not practical to maintain the snooty appeal of Italian restaurants anymore.

That position he took did well for him and on any given day, the ShentonWay regulars make up 70 per cent of the business.

He also feels hiring locals with a hunger to learn is better than a wannabe egomaniac Italian chef.

And it helps that he pays them ‘a bit more than the others’.

His restaurant, in a pre-war shophouse with a woody decor that has hardly changed over the years, has hints of Peranakan heritage.

An old shelf and an ornate partition screen, which is more at home in a Peranakan house, sit proudly amid touches of Italian arts and crafts.

Their menu, which is also a misfit, looks like a tabloid newspaper which lists full Italian offerings from antipastis, two main dish sections to risotto.

To be in the Italian restaurant business specialising in pasta for over a decade and a half takes more than grit and toil.

Many good Italian eateries have come and gone, like Gaetano’s.

Every other little cafe just around the back alley or in a cosy corner of many retail malls is serving an $8.80 version of it.

Some hawkers will tout it for $5.50.

It helps that Mr Luceri has that ‘hawker’ appeal – some popular pasta dishes are still done in the same way since day one and regulars, by default, return for the same dish expecting the same experience every time.
