Why pH matters

The human body, which is made up mostly of water, maintains a delicate balance between acidity and alkaline. This balance is measured on a scale of 0 to 14, and is known as pH. Our pH is important because if the body's pH becomes too acidic, poor health can result. Acidity in the body results in an accumulation of toxic waste and can lead to cancer, high blood pressure, and other diseases. 

Preserving your health 

A diet that consists of mainly acidic foods leads to acidity and toxic buildup in the body. On the other hand, eating a diet full of alkaline foods helps the body rid itself of toxicity and leads to a balance in the body's pH. This contributes to better overall health. Alkaline foods help the body combat the signs of aging; helps improve vigor and energy, as well as keep the organs functioning properly. An alkaline diet is vital to good health. 

Alkaline forming foods

Foods that are alkaline forming include most fruits and vegetables. Alkaline foods are fresh and unprocessed. Examples of alkaline foods include fruits such as bananas, dates, figs, berries, and even citrus fruits. Vegetables include spinach, kale, carrots, beets and chives. Ionized water is also alkaline forming.

In order to rid your body of toxins, it is important to include plenty of these types of food in your diet. Drinking plenty of alkaline water will also help rebalance your pH level. Alkaline forming foods help offset the damage done by acid forming foods. 

Acid forming foods

Add to this another 800 calories for the energy expended in sitting, walking, playing, and washing dishes or thinking seven or eight hours at an office desk, and you have a grand total of 2,500 calories that you must take each day in the form of food merely to keep your weight stationary. These figures apply if you weigh about 160 pounds.

Now suppose, after you have eaten your 2,500-calorie quota, you spy a solitary doughnut left over on the dessert plate. Its loneliness touches you; unless it is eaten it is going to be thrown out with the coffee grounds and cantaloupe rinds. Sheer waste! So you eat it?

That single doughnut is a treacherous, subversive influence. It packs a 200-calorie punch. It boosts your daily calorie intake 200 degrees above par, for a total of 2,700. It is these extra calories you don't need that keep you from getting slim.

Actually, not every calorie in this case of the superfluous doughnut is laid down in you as fat. Because of the stimulating effect of food itself, and through other regulatory means that nobody understands very well, you are usually able to handle a small portion of those surplus calories in your stride.

In practical terms, however, a daily intake of 200 to 300 calories in excess of needs results in a weight increase of 8 to 10 pounds a year. Only 3/5ths of a pound a year is considered allowable; at least that is the usual annual weight increase of normal persons as they grow older. One investigator with a diabolically mathematical turn of mind has calculated that one extra pat of butter a day beyond one's needs will add 165 pounds to one's weight in twenty years.

When you eat more food than you need, it is possible to take extra exercise to prevent its turning into fat. But we might as well be honest with ourselves. It takes more exercise than we think. For instance:

If you consume the above, the additional exercise maintenance requirements needed to burn up these surplus calories would be :

The use of compost will result in nicer plants, but producing the material can be time consuming and hard work. The more you can reduce that effort, investing the saved time in other gardening tasks, the better.

One way to start the process is by building composting bins that at least semi-automate the productopn of compost. A bin should be five feet wide, five feet deep, and four feet high. Start by sinking 4 by 4 posts in the ground for the corners, and then nail 2 by 4s and 1 by 4s, alternating on the sides, leaving 2" gaps between the boards for air circulation. The 2 by 4s are rigid enough to keep the sides from bowing out, and in between each 2 by 4 you can use 1 by 4s to save a little money. The bins are three-sided, with the front open so they can be filled and emptied easily.

Fill one of the bins with grass clippings, dried leaves, and shrub clippings, trying not to put more than 6" of each material on a layer and alternating layers of green and brown material. Keep a few bags of dry leaves around to help with the alternating.

When you root cuttings use coarse sand in the flats and put the old sand on the compost pile. It's a good idea to take plants that do not survive and dump the entire container in the compost bin, which adds more brown material to the mix.

After the bin is full, one option is to turn the material in the bin every few weeks. Another option, however, is to pack as much material in the bin as possible, then start filling the second bin, piling the material as high as possible, even to the point where it spills out in front of the bin and covering the fresh material with mulch or potting soil.

Setting a small sprinkler on top of the pile and turning it on at a very low level will let a small spray of water run on the material. By keeping the material damp, the moisture will cause the pile to heat up, which is what makes the composting action take place.

Once the first bin is full, the second bin is used. As the material in the first bin starts to break down, it settles, which means you can keep shoveling the material piled in front of the bin, up on top of the pile. Continue to do this until all the material is either in the bin or piled on top of the heap. Then leave it alone, except for the occasional watering, which speeds up the process.

Not all of the material will rot completely, a result of not turning the pile. But the material in the center will break down more than the material on the edges, most of it breaking down quite well. Keeping a pile of potting soil on hand at all times or buying two or three yards of shredded mulch to get started, will mean always having a supply of good compost.

Left in a pile, shredded bark will eventually break down and become great compost, and some potting soil is about 80% rotted bark. Some buy fine textured and dark hardwood bark mulch, and put it in a pile to rot, keeping the pile low and flat so it does not shed the rain water away. The idea is to keep the mulch to stay as wet as possible to allow the mulch to break down quickly.

Keep a pile of rotted bark mulch near the compost bins and empty the bin containing the oldest material by piling it on top of the rotted bark mulch. The pile of rotted mulch should be wide and flat on top so the compost material is only 5 to 10 inches thick when it is spread.

The mulch pile might be 12" wide, but only be 24 to 30 inches high. Once the compost is on top of the pile, go around the edge of the pile with a shovel, and take some of the material from the edges of the pile, tossing it up on top of the pile, covering the compost with at least 6" of rotted bark. In this way the compost material will fully decompose.

Once the system is started, don't use all of the material in the pile. Keep at least 2 to 3 cubic yards on hand so there will be something to mix with the compost. If necessary, buy more material and add to e pile in the late summer or fall.

Some supply companies sell a compost material that is already broken down, but try to keep at least 3 yards of old material on hand, adding another 3 yards of fresh material. In the spring you can empty one of the compost bins and add the compost to the top of the pile.

The pile of usable compost will be layers of material, some of which can be chipped off and spread on the ground. You can then mix it together with a tiller and shovel it onto a potting bench.

There are industrial techniques that are larger counterparts of the simple residential techniques, while others employ technology and other methods unknown the the novices of composting. Whichever the method chosen, industrial composting is definitely operating on a large scale and may help a lot of production involving healthy soil. 

1.ASP Method
ASP or Aerated Static Pile method of composting has both active and passive elements to it. The heap is placed on holed pipings that allow circulation without having to manipulate or turn the entire compost heap, as in other industrial composting techniques.It completely relies on air for the bulk of the operation, and is extremely helpful for making sure that the passive and active elements are both in play.

2.High Fiber Method
Wales invented this high fiber method of industrial composting and with great success so far. It involves rigorous stirring and even distribution of materials all throughout the pile. And then the aeration and surface area of the entire compost pile will improve with this symmetry. The compost pile consists of cardboard, newspapers and other forms of used paper.

It is also well-suited for household composting but then it is currently being performed on a laboratory in Wales for further monitoring. This solution was offered as a way of helping reduce pressure in waste landfills. If paper products are used as a material for composting, excluding the poisonous risk of colored ink, it really has a high potential of success. 

3.In-Vessel Method
The in-vessel method, as suggested by its name, involves closed reactors. The heart of South Africa's wine growing industry is The Cape and three of the country's five growing regions are located here. Stellenbosch, one of these regions, accounts for a vast proportion of the country's wine production, in particular, of international grape varieties. 

Having said that, a wine search shouldn't be focused entirely on Stellenbosch. Although the area produces great tasting wines, it's also a firm favourite on the tourist trail, meaning that you'll come across some fairly hefty prices compared to other South African wine regions. If you want to be sure that you get maximum value for money from your wine, yet get all the quality and taste of real South Africa, don't forget to look to the lesser known areas and wine-makers. 

Traditionally white grapes have dominated South African wine production. Chenin Blanc, which is more commonly known in South Africa as Steen, accounts for a huge proportion of the wine production. It produces a deliciously crisp dry wine, although it can be used to make some sweeter varieties. Sauvignon Blanc and Chardonnay are also popular with South African winemakers. 

More recently, demand for South African red wine has taken off, with a number of international varieties, including Merlot, Cabernet Sauvignon and Shiraz, all key to this success. In addition, South Africa's home grown red grape Pinotage, is at the heart of South African wine production. Pinotage was initially slow to gain popularity but has become increasingly sought after as winemakers get to grips with learning how to get the most from it. 

Winemaking took off in South Africa when the migrating French Huguenots brought their winemaking skills to the country back in the 17th century. By the early 20th century, these skills had been rolled out across the country, although it could be argued that the quality of the wine being produced at this time was relatively poor. A master cooperative (KWV) was set up in order to help provide stability and supervise all production within the South African wine industry. However, this was privatised following the end of Apartheid. Since then, an exciting new generation of winemakers has been learning skills from other wine-making nations. New capital and training has been invested and winemakers have had more freedom to experiment. The result is the emergence of a generation of wines which rival those from the New World. 

Unlike many other nations, wine from South Africa clearly straddles the Old World and New. Wine bars also tend to be a comfortable place for people who do not like the "bar scene". One such herbal formulation is called Puri-Tea provided by a herbalist in Colorado by the name of Brigitte Mars it contains the following ingredients:-

Peppermint, Red Clover, Fennel, Liquorice

Cleavers, Dandelion, Oregon Grape Root, Burdock Root

Butternut Bark, Chickweed, Parsley Root, Nettles

Fennel Seeds help with white cell formation in the blood and also keep your acid and alkaline levels balanced. Peppermint is good to use as a body cleanser and toner, whilst Red Clover is suitable for blood purification. Liquorice is ideal for stimulating the adrenal glands in the body and Cleavers is an anti-infection herb. Then we have Dandelion which is good for cleansing and strengthening the body. Next comes Oregon Grape Root which is also good for cleansing and building the body, whilst Burdock Root is good for use purifying the body's system. As for Nettles they are rich in minerals which all bodies need. Then there is Fenugreek which helps to eliminate mucus and toxins from the body, whilst the Yellow Dock Root is good not only as a cleansing agent for the body but helps with the white cell formation. Then finally we have Milk Thistle Seed which is also good for cleansing the body and building its strength.

However, if you do not wish to make these teas yourself you can go to any Health Food Store and they will have them ready prepared. But a way I would recommend to prepare your own it buy to 1 oz of each herb that you will be using then in a jar place a tablespoon of each one and shake the contents up and its ready to use.

When you wish to prepare a cup of this tea firstly boil 1 & cups of distilled water in a glass container, then add a heaped tablespoon of the mixture, allow it to sit for about 10-15 minutes then strain and drink once it has cooled sufficiently. Sausages made from premium cuts of meat are mixed with rare spices and a degree of fat and fashioned into the typical sausage shape for those with plenty of money but if you're not wealthy then you can pop into any supermarket and pick up a packet of sausages. Sometimes the meat content is dubious and it has always been assumed that sausages are made up of the dregs of an animal that can't be used for any other purpose. But this isn't always so and manufacturers are making more effort these days to fill sausages with better quality meat.

Sausages with vegetables, Yorkshire puddings and gravy, sausage and mash with liquor, sausage and chips or sausage and chips, even vegetarian sausages - mix it up any way you like but there will be a sausage to suit.
Nowadays, we have food processing equipment that makes the whole sausage making procedure swift and easy. Meat is automatically ground down to the correct consistency, mixed with fillers, spices and fat and fed through into skins and they are even divided into 'article' by the same machine. But it hasn't always been like this.

Sausages are not a modern food. Records date back to 500bc of kitchens that produced sausages in one form or another. People took great care in the mixing of special spices and the rarer the spice the better the sausage was considered to be. Of course, back then food processing equipment consisted of butchers who would create everything from the sausage skin to stuffing methods and sausage making became quite an art.

Early American colonies were fond of sausages because meat was an expensive commodity and they were instructed to use every part of the animal except the snout. To do this, they would use up the intestines, bladders, uterus, stomach and all parts of the pig to grind down, mix with spice and then cover with a layer of melted fat. This produced a sausage that could then be smoked and thus preserved, lasting for quite some time in cold cellars and providing family food for months.

Smoked sausages were also a favourite with soldiers. These were one of the few foods that they could be sure wouldn't go off too quickly and would provide, in their basic form, a pretty good source of sustenance. They would also have taken black pudding, which is a form of sausage made from pigs blood and this is still a popular dish today, proving further that no part of an animal is wasted.

Over the years, people have found ways round the fact that food processing equipment had yet to be invented. Sausage fillers were made from funnel shaped objects and these made the whole process a little easier as the less handling of the delicate sausage skins, the better. One of the most frustrating things about making a sausage would have been the splitting of the skin whilst filling as this skin not only acted as a way of holding the contents together but would also have been used as a preservative. 

So, whatever the method, whatever the animal part, whatever the spice and whatever the price, there is a way for everybody to enjoy sausages.
