Elder Flower “Champagne”

Recipe for 5 Liter

 

 

12 Elder Flowers (no stems)

5 liter Water

4 Lemons, sliced

700 grams Sugar

 

 

Mix all ingredients in a bowl, pot or bucket and cover with cloth. Leave for about one week at a warm place and stir often. When it’s bubbling, strain immediately and fill in flip-top bottles. Keep in a cool place and use within 2 month.

 

 

Elder Flower Syrup

Recipe for 2 Liter

 

 

2 liter Water

2 kilo Sugar

4 Lemon slices

2 teaspoons Lemon zest

320 grams Elder Flowers (no stems)

40 grams Citric acid

 

 

In a large pot, combine water, sugar, lemon slices and lemon zest. Bring to a boil and cook for 5 minutes. Add the citric acid and cook for one minute. Add the Flowers; quickly boil then take the pot to the side and turn off the heat. Cover and let stand for several hours (about 3hrs or longer). Strain through a cloth then bring the syrup to a boil. Fill sterilized glasses with the hot syrup. (Careful, very hot)!

Add the cooled syrup to plain water, champagne or desserts.
